Originally from Los Angeles, California I found my way into the culinary world as a volunteer at the age of 21. Due to very fortunate circumstances I was introduced to this, high speed and intense, world by way of some of the best kitchens in Los Angeles at the time. These experiences exposed me to refined techniques and amazing products of a very high level straight from the get go, setting the bar for quality and curiosity that would influence my entire career.
At the end of 2003 with an idea to escape from the busy L.A. life for a while, I made a choice to relocate to Costa Rica and open a little pizzeria with a couple friends. This short escape turned into living more than 15 years in this beautiful tropical country. Early on I made friends with a Swiss Italian girl who was living in the same small village, never more than acquaintances, but many years later we reconnected and she became my wife. Now I call the Lugano area home.
As a chef, food lover, and traveler my experiences have varied tremendously, always with a curiosity for something new. Whether a new technique or style of cuisine, this curiosity has fueled the passion to create delicious wholesome food that appeals to the senses and emotions.
My most recent inspirations come from healing foods that bring vitality to the body. Addressing the needs of a vibrant microbiome through a healthy and balanced diet. Only through the biodiversity in our bodies, health happens. I strive to use these practices and knowledge to combine ingredients that will provide a wonderful experience, while at the same time, invigorating the entire system.
It gives me so much joy to have access to all the wonderful products of the region and the inspiration of the beautiful natural environment. I look forward to sharing this with you and your guests.
